Beef Tacos with Guacamole

Filled with the flavors of Sunset’s Certified Angus ground beef, spicy taco seasoning, crisp lettuce, fresh tomatoes, and chunky guacamole, these tacos are perfect for summer and are sure to add excitement to your next meal.

Tacos are super customizable, which makes them perfect for the whole family. Fill them with as much or as little as you like or even add your own favorite ingredients and toppings. Follow your taste buds! If you are feeling more free-form, break up the tortilla shells and build a taco salad. You can even leave the shells out altogether for a bold low-carb meal.

Ingredients:

1 lb Certified Angus ground beef

1 package taco seasoning

1 large tomato

1-2 cups chopped lettuce (Iceberg or Romaine)

1 cup grated Monterey jack or crumbled queso fresco

1 package taco shells

Sour cream

 

For the guacamole:

3 ripe avocados

2 medium tomatoes

¼ red onion

1 clove garlic

1 red or green chile

1 lime

Handful cilantro

Salt and pepper

 

Heat a little oil in a skillet over medium-high heat. Add the ground beef and the taco seasoning to the pan and stir well. Reduce the heat to medium. When it is cooked through, set aside for later.

While the beef is cooking you can prepare the taco toppings. Grate the cheese, chop the lettuce, and dice the tomato. Set them aside in separate bowls, ready for taco-assembling time.

Next, make the guacamole. Chop your tomatoes into a pulp, and place them in a medium-sized bowl.

Finely dice your onions, chile, and garlic. Set aside.

Roughly chop your cilantro and juice your lime.

Halve the avocados, remove the pits, and simply scoop the flesh out with a spoon. You can score the flesh first if you wish. Using a fork or a whisk, stir the tomatoes into the avocado.

Add your diced onions, garlic, and chile to the avocado and tomatoes.

Gently mash the avocados and tomatoes together with a whisk. Next, add the cilantro and lime juice. Season with salt and pepper (to taste) and stir well.

You can leave the guacamole on the chunky side, or whisk it to a smoother consistency you like.

Assemble all your ingredients and toppings—ground beef, guacamole, chopped lettuce, tomatoes, shredded cheese, and sour cream—layer them into the taco shells, and enjoy!
