Pumpkins are all around us, and there’s a chill in the air. That means Halloween is fast approaching! Short on time with all the costume making and party preparations? Never fear – this week’s recipe delivers on flavor and convenience. Whip it up in no time flat – with the help of a box mix, we confess, but you don’t have to share that little secret!

This week’s recipe: Spooktacular Spider Cookies

What you need:

1 box Stonewall Kitchen Classic Chocolate Chip Cookie Mix

1 stick unsalted butter

1 large egg, room temperature

1/3 c. nuts, chopped (optional)

½ c chocolate chips

Why we like it:

This recipe relies heavily on a box cookie mix – a favorite of ours at Sunset Foods. The flavors are tried and true – we’ve baked this mix many times before, and our staffers gobble them up. The fun comes in when you play artist, turning melty chocolate chips into spooky looking spiders! You can whip this recipe up in mere minutes – and they’ll vanish just as quickly, eagerly gobbled up by your little goblins.

Here’s our mise en place for this recipe. Notice, we chose to use Earth Balance, a vegan butter substitute. Feel free to use your favorite type of butter – dairy or otherwise.

Ingredients for the cookies

Preheat the oven to 350°F. Cream the softened butter with about 1 cup of the cookie mix, beating on low speed until smooth.

Add the egg and remaining mix. Beat until well blended. Fold in the chopped nuts (if using. We opted not to add nuts.).

Blending together the components in a mixer

Line baking sheets with parchment paper. Scoop the cookie dough up, forming balls about 1 1/4-inches in size and place them on the cookie sheets, leaving at least 2-inches space between each cookie dough ball. Flatten each cookie slightly with your fingers (if you moisten your fingers with water first, this will help prevent the cookie dough from sticking), and bake for 12-14 minutes, until lightly browned.

Immediately upon removing cookies from the oven, top each with 2-3 chocolate chips. The chips will get melty – that is the moment you create your spooky spiders! Using a butter knife, draw carefully through the center of the chocolate chip to create 2-3 legs on each side of the chip. Repeat with each chip. When all the cookies have been transformed into spooktacular spider cookies, transfer them to a wire cooling rack and allow to cool completely before serving.
